- after mongomock python version requirement being imposed, reflect this in contrak
- now works with python 3.8 and newer
* remove 3.6, 3.7 as mongomock>=4.2.0 now is incompatible with them
* update Python version requirement to reflect mongomock's, which is the current limiter * also update the categories of python that this library is compatible with
* we are now restricted in python 3 support, so remove the generic python 3 listing

* since mongomock release is only up-to-date via pip, install only this package via pip in the conda environment setup
