Snowflake Cortex is a suite of LLM tooling provided by snowflake that is gaining popularity, having it as an available provider here would be huge for folks running LLM stacks within Snowflake.

I have experience contributing to the snowflakedb/snowflake-ml-python library and am happy to pick up this work.
