Add support for docker SoapUI Runner to run mocks #803

Hi there,
Is it possible to add support for running soapui mocks in docker ?

I think this would only require a change of the script that is executed in https://github.com/SmartBear/soapui/blob/next/docker/Files/RunProject.sh
to mockservicerunner.sh as an option.
